Salted Cacao Brownies

Ingredients:

3/4 c. Cocoa Powder

2/3 c. Olive Oil (I used extra virgin)

1/2 c. Boiling Water

2 c. Sugar

2 Egg

1-1/3 c. Flour

1 t. Vanilla

1/4 t. Fine Sea Salt


Method:

Preheat oven to 350.

Place Cocoa Powder in mixing bowl. Blend in 1/3 cup of the olive oil. Add boiling water; stir until thick. Stir in sugar, eggs, and remaining 1/3 cup olive oil.

In a large bowl mix flour and salt. Add cocoa mixture and vanilla. Pour into a lightly greased 13 x 9 inch pan or two 8-inch pans. Bake at 350 for 35-40 minutes (30 to 32 for the 8-inch pans). Cool and frost if desired.
